Fluffy pancakes for breakfast. If you think about happiness in the morning in terms of food, you don’t have to think much harder than that. My family loves this classic pancake recipe. I’m sure your family will as well!
This recipe is very quick to mix up! First, mix all your dry ingredients. Next, add the two wet ingredients, an egg and milk. Then, let the batter sit for 10 minutes. This gives the flour time to really absorb into the milk, which produces a fluffier pancake. This is a good time to preheat your pan.
The best tool, in my opinion, for making pancakes (as well as tortillas, pita bread, fried eggs… the list goes on) is a Lodge cast iron griddle. The cast iron heats evenly, and the warm butter crisps up the edges of the batter giving you a crisp edge and a fluffy center. Is your mouth watering yet?
My family loves to eat pancakes with peanut butter spread on top and maple syrup poured over. Personally, I prefer a classic buttered pancake with maple syrup. Simplicity tastes better for breakfast. Give this recipe a try!

Classic, Fluffy Pancakes
This classic pancake recipe is fluffy and delicious! This recipe is in our weekly breakfast rotation, and I'm sure it will be in yours as well.
Ingredients
- 2 cups AP flour
- 1 TBSP baking powder
- 1 teaspoon salt
- 2 TBSP sugar
teaspoon vanilla
- 1 egg
- 2 cups of milk
- 2-3 TBSP butter for frying
Instructions
1. In a mixing bowl, whisk the first 5 ingredients. Add the milk and egg. Let sit for 10 minutes.
2. While your mixture is resting, preheat your griddle over medium heat. Once it is preheated, melt a tablespoon of butter on the griddle. Use a measuring cup to pour your batter on to the griddle, right in the melted butter.
3. Once bubbles appear as seen in the picture above (and the bottom is a golden brown when you peek at it), flip your pancake. Cook on that side until golden brown around the edges.
4. Serve immediately with butter and syrup, or peanut butter and syrup.
