Curry always seemed like a meal that I could only enjoy at a restaurant. For some reason, those earthy spices and that warm sauce seemed unattainable for my home kitchen. Well not anymore!
This recipe is so simple! The ingredients can be found at your local grocery store and this meal can be thrown together in less than 30 minutes! Throw some rice in your instant pot while you cook the chicken and sauce, and you will have a full meal in no time!
This recipe starts with cooking your chicken. Dust your chicken with flour before sautéing in your skillet. This will give you a nice crust, but also help thicken the sauce at the end.
I have made this recipe with precooked chicken as well, like that from a rotisserie chicken. Dust the chicken just the same, but don’t worry about precooking it. Once your chicken is cooked, remove it from the pan without wiping it out. It’s time time to make the sauce!
Now it’s time for your sauce. Garlic, white wine, and curry give the base to this sauce a mildly sweet, but earthy flavor that is so delicious. If you would prefer not to use wine in the recipe, I have listed an alternative that I have used plenty of time if I don’t have wine on hand. It doesn’t produce the exact same flavor profile, but very similar.
After you’ve let that sauce reduce, it’s time to add your cream. Man, oh man! Don’t skimp on the cream! You will simmer this a few minutes and then add your chicken back to the pan. Add salt and pepper to taste, then serve!
Easy Chicken Curry
Follow this simple recipe to have a warm bowl of chicken curry your family will love. Simple ingredients that aren't hard to find make this recipe a weeknight winner!
Ingredients
- 1 pound chicken, cut into bite size pieces
- 1/4 cup of flour
- 2 TBSP of coconut oil
- 4 cloves of garlic
- 1/2 cup of white wine OR 1/2 cup of bone broth + 1 TBSP sugar
- 2 TBSP of curry powder (yellow)
- 1 cup of heavy cream
- 1 can of coconut milk or cream (around 15 oz)
- salt and pepper to taste
Instructions
- Dust chicken in flour. Heat coconut oil in skillet and saute to cook through. Transfer chicken to a plate.
- In the same pan, add garlic, wine, and curry powder. Cook until reduced almost to half. Add all of the cream and simmer 4 minutes.
- Add chicken and season to taste. Garnish with cilantro or parsley and serve over rice.
