Zucchini Muffins (Double Batch!)

Ingredients
- 3 cups flour (I use soft wheat flour I grind at home)
- 3/4 cup of old fashioned oats
- 3 cups of sugar
- 1 1/2 tsp salt
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 cup of oil
- 2/3 cup water
- 1 1/2 cups shredded zucchini
- 2 eggs
Instructions
- Mix the first 6 ingredients. Preheat oven to 375 degrees F.
- Add the remaining ingredients. Your batter should be nice and thick.
- Add to muffin cups about 2/3 full. Bake for 19-25 minutes.
