These chocolate chip oatmeal bars are packed full of oatmeal, flavor, and CHOCOLATE! It doesn’t get much better than that!
My kids love a prepackaged granola bar. Let’s face it, they sure are convenient. The only bars I will allow my family to put into their bodies come with a pretty hefty price tag! This recipe has no artificial ingredients or preservatives, yet holds up well for that perfect treat tucked away for a lunch on the go!
Anytime I bake anything that contains melted butter, I use a little kitchen hack to make my life easier. Take your butter butter and place it into the baking dish you plan to use. Pop it into your oven while it preheats. This melts the butter for you, and also greases the baking dish! Win, win!
There is a little tip I’d like to share if you’re making these bars for on the go treats throughout the week. Let your bars cool completely once finished baking. Pop them into the refrigerator for about 30 minutes. Then, pull them out and slice them up. The time cooling in the refrigerator makes them the perfect texture for cutting into even sized bars.

Chocolate Chip Oatmeal Bars
Chocolate chip oatmeal bars don't have to come in a plastic wrapper for your family to love them! These bars are filling, packed with oatmeal, and absolutely delicious! Give them a try!
Ingredients
- 2 cups of AP flour
- 2 1/4 cups of rolled oatmeal
- 2 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups of sucanat (can substitute 1 cup brown sugar and 1/2 cup white sugar)
- 2 eggs
- 1 cup of melted butter (coconut oil is a great substitute if you're dairy free)
- 2 tsp vanilla extract
- 1 cup of chocolate chips
Instructions
1. In a mixing bowl, add the first six ingredients and combine well.
2. Make sure the butter is not warm enough that it will cook the eggs. Add the butter, eggs, and vanilla. Mix to combine. Lastly add the chocolate chips.
3. If you've done my kitchen hack from above your pan should already be greased, so now add the mixture to the prepared pan. Use the bottom of a cup to press the mixture down evenly into the pan.
4. Bake at 350 degrees F for 20-25 minutes. For bars to take in your lunch or on the go, let the bars cool and them refrigerate 30 minutes. This makes them the perfect texture to cut into nice squares. Enjoy!
