Pita bread is something my family looks forward to at the local Greek restaurant. Well now there is no need for us to leave the house to enjoy that delicious bread! This recipe takes no time to come together and is less expensive and healthier than it’s store-bought counterpart.
The awesome thing about this recipe, is that it is my soft sourdough sandwich bread recipe! The only change in the dough is cutting the sugar by half! So if you have my sandwich bread recipe down, you also have pita bread! Win win!
Though the dough is the same, the process differs slightly. It actually takes less time to make the pita, so it’s perfect if you’re in a pinch and have no time to let your bread rise the second time.
Make your dough as normal and let it rise once. You can let it rise 4-6 hours and as long as overnight if you want to make it in the morning. After the initial rise, it’s time to cook! Divide your dough into 8-10 equal pieces and dust a surface with flour. Roll into rounds as pictured above.
I always cook my pita on cast iron. Sometimes I will use my large cast iron pan, but the majority of the time I use my Lodge Cast Iron Griddle. It is the best for tortillas, pancakes, and pita!
Cook the pitas over medium heat until golden brown like pictured above. Flip and cook the other side. These will last about 5-7 days and they freeze well!
