Do you have leftover sweet potatoes? This is a great way to use up leftover mashed sweet potatoes!

The sweet potatoes in this recipe keep them so moist. This recipe is just a base recipe, but try mixing in diced apples or chocolate chips to really dress it up. These can be served for breakfast, a snack, or a light dessert.
I like sprinkling a little bit of sucunat on the tops of each muffin. This gives a little bit of crunch and extra flavor. If you don’t have sucunat, try light brown sugar instead.

Sweet Potato Muffins

Moist sweet potato muffins your family will love!
Ingredients
- Grind 1 1/4 cup of soft white wheat (about 2 cups of flour)
- 1 TBSP baking powder
- 2 tsp of cinnamon
- 1 tsp of salt
- 1 cup of sucunat or light brown sugar
- 1 egg
- 2 cups of mashed sweet potatoes
- 1/2 avocado oil
- 1 tsp vanilla
Instructions
1. Combine all ingredients in a bowl until it becomes a very thick batter.
2. Preheat oven to 375 degrees F.
3. Scoop into muffin cups and sprinkle the tops with sucunat. Bake for 19-23 minutes.
